Stuffed peppers
Stuffed peppers recipe :
For the filling –
- Heat some oil in a frying pan, add onions, finely chopped garlic, chilli’s, deseeded tomatoes, boiled potatoes, panner / grilled chicken or tofu, olives
For the seasoning –
- Add salt, chilli powder, red chilli sauce or pizza sauce, bit of sugar, dried oregano, coriander leaves
- Mix everything together (filling is ready let it cool down for 5 minutes)
- Chop medium size capsicum of any color into half and deseed
- Add mozzarella in the filling and mix well
- Now fill the filling in the capsicum cups
- Garnish with little mozzarella and bake them for 10-15 minutes at 180° Celsius
- Remove and serve
