Shakshukha

Shakshukha recipe
Ingredients
- 2 tbsp Olive oil
- 1 Onion, chopped
- 4 Tomatoes , chopped
- 1 red bell Pepper, sliced
- 2 Garlic, crushed
- 1/2 tsp paprika/ Chilli powder
- Salt to taste
- 4 Eggs
- 1 tsp black pepper
- Basil and Coriander for garnish
Instructions

Heat oil in a wok and add minced garlic and onion and saute.

Now add peppers and fry till soft.

Add chopped tomatoes along with cumin powder, Chilli powder, and salt.

Fry till tomatoes get mushy and cooked.

Meanwhile take 3-4 eggs, break them on the tomato sauce at equal distance.

Cook the poached eggs for 10-15 mins, with the lid closed.

Turn off the gas. Garnish the shakshuka with pepper powder, few basil leaves and chopped coriander.
