Quinoa salad recipe 🥗
Ingredients:
- Quinoa
- Chickpeas (good source of protein)
- Lemon 🍋
- Olive oil
- Parsley leaves
- Mint leaves
- Cucumber
- Feta cheese
- Tomatoes
- Scallions
- Garlic
Recipe:
- Add 2 cups of water to a cup of quinoa (similar to cooking rice) and let it cook. You can say it is cooked when you see a little white germ pops out and makes a circles the seed and quinoa become light translucent consistency
- Add fresh chopped mint and parsley leaves to the quinoa
- Add tomatoes (cherry tomatoes), cucumber, scallions, cooked chickpeas (soak beans for 2 hours in water and steam cook in pressure cooker)
- Add fresh feta cheese
- Salad dressing – take a bowl and squeeze half a lemon juice in it, add freshly chopped garlic, oil olive, enough salt, black pepper and mix it well (lemon vinaigrette)
- Drizzle the salad dressing on the quinoa and toss everything together and serve
